Smokey Southwest Salmon

The USDA would say to cook your salmon to 145° but if you do this you will have dried nasty fish everytime. Here's a recipe for the perfect salmon.

Season the salmon generously with PSC Smokey Southwest. Heat a skillet over medium high. Sear skin side down for about 4 minutes in a little bit of oil. Remove and let rest for a few minutes. Bake in an oven at 300° until the internal temp reads 125°. For great fish you must use a probe thermometer! Cover and let rest for 10 minutes. Amazing and delicious salmon is at your fingertips!
