Chipotle Dust Pork Satay

Satay is an amazing food to make for friends, family or just for a change of pace! This pork satay recipe combines the classic Asian flavors of satay with bold smokey flavors of the southwest.

Ingredients
- 1 pound sliced pork (loin, tenderloin, or shoulder)
- 3 green onions, diced
- 3 cloves garlic, crushed
- 2 Tbsp PSC Chipotle Dust
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1 teaspoon ground coriander
- 3 tablespoons fish sauce
- 1 tablespoon lime or lemon juice
- 1 tsp dark soy sauce
- 1/3 cup honey
- 1/2 cup coconut milk
- 1 package wooden satay sticks


Directions:
- Soak satay sticks in water to prevent burning
- Cut the pork into strips a couple of inches wide
- Combine all other ingredients for the marinade
- Pour marinade over the pork and allow to marinate in the refrigerator for at least 30 minutes, or up to 24 hours
- Skewer the meat on the stick positioning the meat near one end of the stick
- Preheat grill on high for 10 minutes

- Brush grill grates with oil and then lay satay on the grill for 5 to 7 minutes, or until meat sizzles and browns. Turn sticks and grill the other side another 5 minutes, or until cooked but still tender
