Smokey Stuffed Pork Tenderloin

This delicious, tender and juicy pork tenderloin will wow your family and friends.  Amazing flavors from the caramelized filling combined with the pork will have your taste buds dancing!

Ingredients:
- 1 pork tenderloin
- 1 sweet onion
- 1 cup chopped mushrooms
- 1 pound prepared bacon
- 2 Tbsp olive oil
- 2 Tbsp PSC Chipotle Dust
- 1 Tbsp PSC Whiskey Smoked Sugar
- 2 tsp PSC Smoked Salt

Directions:
- filet open the tenderloin and flatten with kitchen mallet
- season both sides with Chipotle Dust
- Caramelize onions and mushrooms with oil, Whiskey Smoked Sugar and Smoked Salt
- Spread onions, mushrooms and bacon over tenderloin
- Roll up tightly and tie with butcher string
- Bake at 350° until internal temp reaches 145°

- Let rest for 15 minutes, then slice and enjoy!
