Smoke Pairing: Pecan

Ingredients
• 2 oz bourbon
• 3/4 oz pure maple syrup
• 1/2 oz fresh lemon juice
• 4-5 fresh mint leaves
• 2 dashes Angostura bitters
• Prescott Spice Company’s Whiskey Smoked Sugar
• Large ice cubes or frozen granite cubes

Instructions
1. Rim a rocks glass with Prescott Spice Company’s Whiskey Smoked Sugar.
2. In a shaker, muddle the mint leaves with maple syrup and lemon juice.
3. Add bourbon, bitters, and ice, then shake well until chilled.
4. Strain into the prepared glass over a large ice cube or granite cubes.
5. Place the chimney smoker on top of the glass, add pecan wood chips, ignite, and cover to hold in smoke. Let it infuse for 30-60 seconds, then remove the smoker.
6. Garnish with a mint sprig and serve.
