Sweet Corn Chipotle Salsa
Sweet, spicy and smokey homemade corn salsa. This is an easy and delicious recipe that your family will love! Serve warm or cold with chips or use on a taco or in a salad.
Ingredients:
- 1 medium onion, diced
- 1 bell pepper, diced
- 5 chipotles (canned in adobo), diced
- 3 Tbsp Prescott Spice Company’s Whiskey Smoked Sugar
- 2 tsp Prescott Spice Company Smoked Salt
- 2 cans of sweet corn
- 1/4 cup water
- 2 Tbsp distilled white vinegar
Directions:
- Sauté onion, bell pepper, chipotles, sugar and salt in skillet over medium high heat with a drizzle of oil until liquid is evaporated and onion starts to brown (15-20 minutes)
- Using a blender or food processor, blend one can of corn, including liquid, until smooth
- Drain the second can of corn
- Thoroughly combine all ingredients in a bowl and enjoy!
