Forget about those frozen little tortilla logs labeled taquitos by making them yourself and filling them with what you want!
Ingredients:
Chicken Taquitos:
– 1 rotisserie chicken shredded
– 1 cup crema
– 1 1/2 cup shredded cheese (we like a cheddar jack combo)
– 1/2 cup chopped cilantro
– 1/2 bunch of green onion, diced
– 2 cups chicken broth
– 20 tortillas
– 1 tsp PSC Smoked Salt
– 2 tsp PSC Chipotle Dust
Beef Taquitos:
– 1 1/2 pound ground beef, cooked and drained with seasoning added
– 1 1/2 shredded cheese
– 1/2 cup cilantro
– 1 can rotel, drained
– 1/2 bunch of green onion, diced
– 2 cups chicken broth
– 20 tortillas
– 1 tsp PSC Smoked Salt
– 1 Tbsp PSC Chipotle Dust
Directions:
– Mix together filling (all ingredients except chicken broth and tortillas)
– Dip tortillas in warmed chicken broth
– Place a little filling in tortilla and wrap up tightly
– Place these on baking sheet being careful to leave space between each one
– Bake at 375° for about 25 minutes or until outside is golden brown and slightly crispy
– Serve immediately with your favorite guac or salsa
