The USDA would say to cook your salmon to 145° but if you do this you will have dried nasty fish everytime. Here's a recipe for the perfect salmon. Season the salmon generously with PSC Smokey Southwest. Heat a skillet over medium high. Sear skin side down for about 4 minutes in a little bit of oil. Remove and let rest for a few minutes.
